The combination of pear and Earl Grey is a personal favourite: elegant, subtly perfumed and intrinsically wintery. Something robust and salty to serve with baked oily fish, grilled chicken or beef sirloin perhaps. A welcome jolt of flavour, acidity, and textural contrast.
