Ibaïama pork "Béret Basque" with Piment d'Espelette
Our Béret Basque comes from our amazing Ibaïama pork supplier. There are only three farms who rear this breed of pig and who are able to adhere to the very strict husbandry requirements that govern the Ibaïama label. Based in a small village in the Basque Pyrenees the pigs roam the mountainside freely.
The Béret Basque uses the traditional saucisson ingredients, but slightly leaner. It’s topped with the local Piment d'Espelette which gives it a little more spice than a standard saucisson.
Ingredients: Lean and fat pork, salt, LACTOSE, dextrose, spices, herbs, Espelette pepper (0.19%), pepper, sucrose, preservative: potassium nitrate, flavours, ferments.

This is a new discovery. The shape is unusual, a real little "béret ", flat and round instead of a traditional tube. The skin is soft enough to be eaten. The taste is superb, spicy, lean, full of flavour. Quite irresistible!
