Butterfly Saddle of Wild Muntjac Venison (1.2-1.6kg)
This is an exceptional cut of meat. Muntjac is regarded as one of the most delicious of all the venison. Delicate, yet far from bland; the right amount of iron and meatiness is balanced by a slight sweetness. But where muntjac comes into its own is the texture. It is by far the most tender venison available.
Our Muntjac come from the Yattendon Estate or from the nearby Berkshire or Hampshire Estates. They breed all the year-round, so there is no off-season, and they cause damage to coppice regeneration and the loss of some plants of conservation importance, such as primulas, so the population needs to be controlled.
The 'butterfly' or 'Dragonfly' cut cooks similar to a fillet steak. Very high heat and then allow time to rest.
